  1. Hello gang, I've been gone awhile..went back to school...one more semester
    of classes then "walk the walk" in Spring, 05, with an MBA...I'm working in
    a call center and a lot of the young ones who have moved away from home at
    an early age, are either "cooking challenged" or just not interested in
    learning....it's a very good place to try out new recipes...somewhere along
    the way I saw/found a recipe for one pot mac & cheese....when I looked for
    the recipe, I couldn't find it, so I improvised a bit, and this is what I
    came up with:

    One Pot Mac & Cheese

    1 14 ounce can of evaporated milk 1 14 ounce can of water 1 cup dry mac (either large or small) 1
    cup fresh cheese (I've used Trader Joe's shredded Mediterannean Blend of Provoone, Fontina &
    Kasseri) 2 tablespoons of flour Salt/pepper & whatever else you want to use bread crumbs

    Heat evaporated milk & water in pot until bubbling...turn down heat.... Add mac and simmer until mac
    is done to your taste. Add flour & seasonings...mix well until flour is absorbed & mix begins to
    thicken.. When mac is soft...add cheese Pour into throw-away 8x8 aluminum pan Cover top completely
    with bread crumbs. Put in oven at 350 F until done.
