  1. Orange Shrimp -Low Fat version

    shallots or scallions -- chopped
    shrimp -- enough for two
    1/2 cup orange juice
    2 teaspoon(s) capers -- drained & rinsed
    kosher salt

    Saute some shallots or spring onions in a little bit of olive oil,
    add some shrimp (enough for two) and cook until just barely cooked
    through. Remove shrimp and set aside. To the pan add 1/2 cup orange
    juice, 2 teaspoons of rinsed capers and 1/4 teaspoon kosher salt.
    Bring to a boil and cook until sauce is slightly thickened about 1
    minute. Spoon over shrimp.
