  1. Pancake Mix

    1 1/4 cups all-purpose flour 2 1/2 tsp. baking powder 2 Tbsp sugar
    1/2 tsp. salt 1 egg 1 cup milk (may need a little more to thin the batter) 3 Tbsp vegetable oil or
    melted butter I like to add the butter for a richer batter
    2/2 tsp. vanilla extract

    In a small bowl, beat the egg, milk, vanilla and oil. Mix all of the dry ingredients together in a
    large bowl. Slowly add the milk/egg mixture to the flour mixture and mix with a large spoon or whisk
    just until all of the dry ingredients are moistened. Cook on a griddle with a bit of oil. Makes
    about 8 Jan

    Can add the following to the batter:

    Blueberries Sprinkle on top of the pancake just before turning Cinnamon add to the batter Finely
    chopped apples (sauteed in a little butter first) then add about
    3/4 tsp. cinnamon. Add to the batter. Mini chocolate chips add to the batter
