Papas Con Carne
1 lb. (approx) stew meat
4 potatoes (med. to lg. size)peeled and cut into cubes
1 16 oz. can tomato sauce
1 tsp. comino powder
1 or 2 cloves garlic (minced)
1/4 cup oil
enough water to cover ingred.
2 tsp. cilantro
salt to taste
pepper to taste
Brown the meat in oil in a dutch oven or lg. pan. While meat is browning,
in a bowl mix tomato sauce, cominos(cumin),garlic, and cilantro. When the
meat is brown, add potatoes and cook for 5 minutes, stirring frequently.
Add the tomato mixture and enough water to cover all the ingredients, and
cook til potatoes are transparent.
Note: For a tastier stew, simmer the browned meat with tomato mixture and
about 2 cups of water for about 30 - 45 minutes, then add the rest of the
ingredients and cook til potatoes are done. You can also add a can of
green beans or peas towards the end of the cooking time.
This is a stew that tastes good with French bread.
