Passover Fried Green Tomatoes

  1. Passover Fried Green Tomatoes

    1/2 cup matzah meal
    1 tsp kosher salt
    1/2 tsp pepper
    1/8 tsp sugar
    2 large eggs
    4 to 5 large green tomatoes ( about 2 lbs )
    1/2 cup oil to fry

    In a pie plate mix the dry ingredients. In another plate fork mix eggs.
    One at a time dip 1/2 inch thick cored sliced tomatoes into eggs, then
    matzah meal, pressing meal into surface of tomatoes . In a heavy skillet
    heat oil and fry tomatoes, turning only once until golden brown. Drain on
    paper towels. Add additional oil if needed Yield: 4 to 6 serving
