  1. Microwave Peanut Brittle

    This is so easy and very tasty:

    1 cup granulated sugar
    1/8 tsp. salt 1 cup raw peanuts
    2/2 cup white corn syrup 1 tsp. butter 1 tsp. vanilla 1 tsp. baking soda

    Mix sugar, salt and syrup and cook uncovered in a deep microwave safe container on high for 4
    minutes. Stir then add the peanuts; cook on high for 4 minutes. Remove from microwave and add the
    baking soda. Stir quickly until mixture turns a darker color. Pour immediately onto a greased cookie
    sheet. Let cool and harden, then break into pieces. Jan (Clean the microwave container immediately
    or the residue from the brittle will be hard to remove).
