Pear Walnut Bread
Recipe from El Farolito
Santa Fe, New Mexico.
Yield: 2 loaves
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter (at room temperature)
1 1/2 cups sugar
4 eggs
2 teaspoons vanilla extract
1 1/2 cups vanilla yogurt
1/2 cup brown sugar
1/2 cup walnuts, chopped
2 teaspoons cinnamon
2 medium pears, diced
Combine flour, baking powder, baking soda and salt. Set aside. In the bowl
of an electric mixer, beat butter and sugar until creamy. Add eggs one at
a time. Continue to cream and add vanilla, then yogurt. Fold in dry
ingredients. Grease and flour two 9x5 loaf pans and then fill half full
with batter. Combine brown sugar, walnuts, cinnamon and pears. Divide
mixture in half and sprinkle portions over batter. Fill pans with
remaining batter. Bake at 350 degrees for 50-60 minutes, or until a
toothpick inserted in the center comes out clean. Makes 2 9x5 loaves.
