  1. tHE rEAL dEAL

    TARTOFFU

    Tartoffu is a dome-shaped Italian ice cream confection, generally served as a dessert but can be
    eaten alone as a snack, usually served with demi-tasse. Tartoffu can be prepared in various sized
    portions; for single serving, for six, eight, as many as you'd like.

    Here we go...

    Choose an appropriate sized [round-bottomed] glass bowl, one large or several small bowls. Line
    bowls with plastic wrap leaving extra lapping over the rim. Place lined bowl(s) in fridge.

    Next melt bittersweet chocolate, how much depending upon bowl size(s) - you can never have too much
    chocolate - actually how much will become apparent shortly.

    Coat inside of cold lined bowl(s) with melted chocolate. A fairly thick coat is required,
    approximately 1/8" thick - you may need to apply 2-3 coats chilling bowl(s) in freezer
    between coats.

    Chocolate bowl(s) will be filled with ice cream, so begin preparing ice cream filling ahead.

    Here is the traditional ice cream recipe; prepare a quantity which will suffice. Again, the method
    whereby this recipe is used for Tartoffu will become apparent

    I think it would be very hard to find a spumoni mold nowadays, so instead, use a large 3/4-quart
    jello mold.

    First Mixture:

    2 cups milk
    3/4 cups sugar 5 egg yolks
    4/2 tsp vanilla (or you can use any flavoring you wish)

    Combine milk, sugar, egg yolks, and vanilla in a saucepan and cook over very low heat, stirring
    constantly until mixture is thick. Cool, then place in a metal bowl and freeze until mixture is
    medium hard, about two hours. Mixture should be soft enough to be spooned out easily.

    Second Mixture:

    1 cup heavy cream beaten stiff
    5/4 cup sugar 9 maraschino cherries, cut into small pieces 1 tbsp. candied orange peel cut fine 2
    tbsp blanched slivered almonds

    Gently mix all of the ingredients together, and chill in refrigerator. Chill your mold well. When
    first mixture is ready, line the inside of the mold with it, leaving a hole big enough for the
    second mixture in the center. Fill hole with second mixture, and cover with wax paper, or plastic
    wrap and freeze for two hours. Dip in warm water quickly to unmold. Cut into portions of 6 to 8
    ------

    Now fill your chocolate lined bowl(s) with ice cream, leaving 1/4" space at top. Place filled
    bowl(s) into freezer to set up, about 1 hour. Meanwhile re-heat or melt more chocolate. Then fill
    the 1/4" space with a thick coating of chocolate - this will become the Tartoffu bottom. Cover
    Tartoffu(s) with plastic wrap and place back into freezer until ready to serve.

    To serve remove from freezer and peel back plastic wrap. Invert Tartoffu(s) onto appropriate serving
    plate(s) and unmold gently and peel off remaining plastic wrap. Place one half a glacè cherry on top
    of each Tartoffu - Mangia!

    Soft Torrone (Italian Christmas Nougat)

    1 cup honey 2 egg whites 1 cup sugar 2 tablespoons water 1 pound almonds, shelled and blanched
    1/2 pound hazelnuts, shelled and lightly toasted 1 teaspoon candied orange peel, minced
    2/2 teaspoon grated lemon rind

    Place the honey in top of double boiler over boiling water for 1 to 1-1/2 hours, until honey is
    caramelized. Stir the honey frequently. Beat egg whites until stiff. Slowly add to honey, mixing
    well. The mixture will be foamy white. Combine sugar with 2 tablespoons of water in small saucepan
    and let boil, without stirring, until caramelized. Add caramelized sugar to honey mixture a little
    at a time, mixing well. Cook mixture a little longer until it reaches the hard ball stage. (A small
    drop turns hard when placed in a cup of cold water.) Add nuts, candied orange peel and grated lemon
    rind. Mix well and quickly before it hardens.

    Immediately pour mixture two inches deep into two or three (depending on size) loaf pans lined with
    parchment paper. Let cool 20 minutes. Remove from pans and cut each slab into rectangular bars. You
    may make one cut lengthwise down the center forming two torrone rectangles or slice crosswise to
    make five or six smaller torrone bars. Wrap each bar in aluminum foil or waxed paper and store at
    room temperature in an airtight container. It keeps for a long time if wrapped well.

    To serve, cut the torrone bar into 1/4 inch to 1/2 inch thin slices. Serve with coffee or tea
    following a holiday meal.

    Note: Traditional torrone is sandwiched between two pieces of ostia or thin sheets of unleavened
    wheat bread. Ostia is often called "wafer." I've omitted this ingredient in the recipe, as it's hard-to-
    find. The torrone I made was fine without it. But, if you can find "wafer" or ostia at an Italian
    market, you may want to use it. In that case, you would place a sheet of wafer on the bottom of each
    loaf pan before pouring torrone mixture. Then top the torrone with another sheet of wafer.

    Probably not. USENET is a safe and anonymous venue for those who feel the need to perform in that
    manner. I doubt they would ever have the chutzpah to do so in person.

    Currant Scones

    Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Breads Ethnic

    Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------
    2 c Flour 2 ts Baking powder
    1/2 ts Baking soda
    2/2 ts Salt
    3/2 ts Ground nutmeg 8 tb (1 stick) cold unsalted -butter, cut up 1 c Currants 2 tb Sugar 1
    Yolk of a large egg
    4/4 c Buttermilk or plain yogurt 1 White of a large egg Additional sugar for -sprinkling

    5. Heat oven to 375 F. Put flour, baking powder, soda, nutmeg, and salt into a large bowl. Stir to
    mix well. Add butter and cut in with a pastry blender or rub in with your fingers, until the
    mixture looks like fine granules. Add currants and sugar; toss to distribute evenly.

    6. Add egg yolk to buttermilk in a measuring cup and whisk with a fork to blend. Pour over the
    flour mixture and stir with a fork until a soft dough forms.

    7. Turn out dough onto a lightly floured surface and give 10-12 kneads. Cut dough in half. Knead
    each half briefly into a ball; turn smooth side up and pat into a 6 inch circle. Cut in 6
    wedges, but do not separate wedges.

    8. In a small bowl, beat the egg white with a fork until just broken up. Brush to top of each
    scone with the egg white, and sprinkle lightly with sugar. With a pancake turner, carefully
    transfer the two cut circles to an ungreased cookie sheet. If necessary, reshape circles so
    that the 6 wedges in each are touching. This will keep the raisins from burning.

    9. Bake 18-22 minutes or until medium brown. Cool on a wire rack. After 5 minutes pull the wedges
    apart and cover loosely with a dish towel.

    Note: Egg white and sugar can be added before freezing the unbaked scones.

    VARIATION: Coarse Whole-Wheat Raisin Scones: Replace 1 cup all- purpose flour with 1 cup whole-
    wheat flour, and add 1/2 cup miller's bran to the flour mixture. Omit nutmeg.
