Subject: Pickled Beets
Does anyone have a recipe for pickled beets?
Pickled Beets
1 1/2 lbs small beets
1 1/2 cup white vinegar
1/2 cup water
1 cup brown sugar
1 Tbsp mixed pickling spice tied in cheesecloth
Cook beets in salted water until just tender. Peel beets and slice if not
small enough. Pack into sterilized jars. Combine vinegar, water, and
sugar. Bring to a boil and simmer with bag of spices for 5 minutes. Pour
hot liwuid over beets to cover completely. Seal.
Yields 2-3 pints.
Recipe may be increased proportionately.
