Pineapple Chicken

    Pineapple Chicken

    4 chicken breasts
    1 cup oil or butter
    2 Tablespoon lemon juice
    1 cup pineapple juice (reserved from can)
    2 Tablespoon soy or soya sauce
    pineapple rings
    salt, paprika, garlic powder, flour, bay leaf

    Cut chicken into bite sized pieces. Combine flour, salt, pepper, paprika and
    garlic powder in a large zip lock bag. Shake a batch of chicken bites at a
    time in the bag until completely coated. Lightly fry in pan and remove to
    baking dish. Mix together pineapple juice, lemon juice and soy sauce. Pour
    over chicken. Add 1 bay leaf. Bake at 350 for 1 hour. Meanwhile, shake
    pineapple rings in flour mixture and fry lightly. Serve on platter with
    chicken.
