Pizza for Me

  1. I am diabetic and I take pills. I am also on sliding scale
    insulin but I haven't had a shot in 6 months or so.

    I take glucophage a couple times a day and try to eat right
    and get some exercise.

    I'm about #50 overweight, and I like to eat good food.

    I just came up with this one:

    Tam-X-ico Tortillias - (La Bonita Ole' Inc...bought at
    Krogers) Veggie Shreds - (Galaxy Nutritional Foods...bought
    at Krogers) Turkey Pepperoni - (Hormel...bought at Krogers)

    Heat oven to 475

    Take a pizza stone and lay one tortillia on it. (I think
    these are 10"😉 Place 17 slices of Turkey Pepperoni on the
    tortilla Spread 3 oz of the Veggie Shred Mozarella Cheese
    stuff on that.

    Bake for 10 mins at 475 or until the veggie cheese stuff
    starts to bubble.

    THIS IS GREAT! I have been eating one of these for dinner or
    lunch the last few days. Very tasty.

    I have also sprinkled red pepper seeds on this, made it
    with portabella mushrooms, onions, green peppers, and even
    diced tomato.

    Turkey Pepperoni (hormelpepperoni.comhormelpepperoni.com) 17 slices
    is one serving 80 calories, 35 from fat 4g Fat - No trans
    Fat (1.5g saturated) Carbs 9g protein 600 mg Sodium 40mg
    cholesterol

    Veggie Shreds (cheese alternative made with soy) Mozarella
    Flavor (galaxyfoods.comgalaxyfoods.com) 1oz is one serving 60
    Calories, 30 from fat 3g fat - no trans, no saturated
    Cholesterol 2 Carbs 6g protein 390mg Sodium

    Lo-Carb Wheat Tortillia (tamxicos.comtamxicos.com) 90
    calories, 45 from fat
    4.5g Fat - no trans, no saturated Cholesterol 300mg Sodium
    9g Carbs - 4g fiber = 5 net carbs 5g protein

    Total for my Pizza Recipe:

    Fat - 17.5g - no trans, 1.5g saturated Protein - 32g Carbs -
    15g - 4g fiber = 11g net carbs Sodium - 2070mg
    (hmmmm...kinda high)

    Subscribe to alt.food.diabetic and do a little googling on
    that (and here) for specific recipes. Also worth googling on
    key words like "snacks" breakfasts" etc.
