  1. I've got a ham for christmas dinner and am trying to figure out the
    rest of the spread. Was wondering what other folks would be having for
    their holiday dinner. I think it would be helpful to share ideas for
    foods that make us feel festive without breaking the LC habit.

    Freshly roasted Chicken, Turkey & Ham (cold from the deli - I don't
    roast turkeys or hams in summer), Prawns, Greek Salad (Feta
    cheese,Tomato,Olives,Spanish Onions,Cucumbers,Celery). For those who
    want a full hot meal, I roast turnips, pumpkin, sweetpotato, garlic
    (whole), and capsicums. I make a gravy using the meat juices from the
    roasts thickened with rapidly reduced cream and wine and add green
    peppercorns. Plus lots of fresh asparagus, both hot and cold.

    Plenty of good red wines, some light beer for those who drink it and
    jelly, fruit, custard and cheese for after. Christmas pudding
    (purchased) for those who want it.

    The non-diabetic and non low-carb get fresh bread rolls and roasted
    potatoes as well the other choices.

    Not a problem, only cooking for ten, (maybe twelve) this year. Since
    going low(er) carb, my cooking and preparation times have reduced by
    quite a large factor. No cakes or puddings, no bread baking, no pasta
    salads etc.

  3. Mmmn, asparagus sounds good. I sometimes take the stalks, lightly steam
    them to get them partly cooked, then wrap 3-4 in a strip of bacon and
    place under the broiler until the bacon is crisp and the asparagus is
    tender. Squeeze a lemon over the top just before serving.

    I think I'll add that to our menu.

    I will probably roast a turkey. I'd rather do ham, but my son-in-law loves
    the drumsticks and I did promise... Anyway, I will do a sweet potato
    casserole (non lc) for my daughter, and maybe pumpkin or apple pie (non lc
    also). I can eat a bit of the pumpkin pie without the crust and some whipped
    cream, not too carby if I use cream instead of evaporated milk in the pie.

    I am also going to steam a whole head of cauliflower (microwave is best) and
    top it with a parsley cream sauce (lc), and make a corn pudding. I tried a
    great recipe at Thanksgiving, and am going to make it lc by substituting all
    but 3/4 c. of the corn with diced zucchini and red bell pepper, lightly
    sauteed. Crisp-tender butter-steamed asparagus. Then a relish tray with lots
    of carrot and celery sticks, paper-thin white turnip slices, scallions,
    assorted olives, and dill pickles.

    All very homely and traditional and not too much work. I may change my mind
    if I like others' suggestions better than my own... lol!

    My 90+ year-old mother, who likes very few things by this time, does
    indeed like the Fauxtato recipe. This is good, as my wife and I both
    like it too.
