  1. I'm the only one in my family that likes cheesecake (sad, I know).
    I have a bunch of mini-springform pans that I've never used and just
    scored
    a pile of Philly cream cheese bricks ($1 ea., 8 oz.), so I'm committed
    to making some.

    The question is: Will they freeze OK? (Seems to work for Sara Lee.)

    Yes, a baked cheesecake using cream cheese, eggs, and sugar will freeze
    just fine. You might want to add a tablespoon of flour or cornstarch to
    the batter before baking.

    Thaw th frozen cheesecake in the refrigerator.
