Then there are the all arounders like Lance. Each is diff. in capabilities.
The second thing is that there's the speed they can do on flat ground for, say, 100 miles which is amazing but probably not that far diff. from the top amateurs. HOWEVER, the mountains is where the top guys just blow it out of the water. Example: Lance rode the Col de Maradonna (8 mile long, more than 8%) in 30 minutes 27 seconds. That's 16 mph, up an 8% gradient! So the area where these guys just blow the door off normal cyclists, or even top amateurs, is on climbing.
So if you had 100 miles with three hors category climbs, the pros would destroy everyone by a greater margin than on a flat 100.

Oh, and for a TT, Lance won a 58 kilometer time trial (that's 36 miles) at a speed of 53.896 kph, or 33.48 mph. So he rode for just over an hour at 33.5 mph (and there were some small hills in there).
