water, too.Btw, alkali processing of cocoa increases solubility by
converting the fat to soap (saponification). While the
solubility of proteins depends on pH, milk is more or less
neutral, and whey proteins are what's left after the other
milk proteins are precipitated by acidity and the action
of rennets.
