  1. We love Vadalia onion rings,but they are quite expensive
    commercially packaged.We would like to make our own
    fried/coated Vadalia onion rings and freeze a bunch.Not sure
    if they would come out ok or mushy,anyone tried this?

    Save your money. There's a common misconception about
    "sweet" onions like Vidalias, Texas Sweets or Walla Wallas.
    People think they're sweeter than any other ones and it's
    not true. All onions have those compounds that make us cry
    and that irritate mouths. Sweet onions just have a lot less
    of them. But...

    Cooking onions eliminates those compounds. So after *any*
    onion gets hot it's, for all intents and purposes, a sweet
    onion. If you've ever chopped a cooked onion, you know that
    it doesn't make you cry.

    Use any sort of white or yellow onion.

    All these "sweet" onions just have less flavor, IMO. For
    cooking onions I look for short squat regular white/yellow
    onions rather than any Vidallias, 1015's or Maui's - though
    they are fine for raw preps like salads and such.

    I think the sweet onions are exceptionally inferior for
    onion rings.
