What runs better on old "was a 5/10 speed" and now is a "7/14 speed" freewheel/chainwheel setup ? >>

I answer-8s chains are thicker than 9s by about .2mm or so. Should match the chain to the cog spacing unless it is a friction shifter setup, where you can really use just about any chain.
So if indexed and 7/8s spacing-use an 8s chain like a Sram PC-48. If it's indexed and 9s, use somehting like a Sram PC-59..
