Can someone please tell me why a lot of people here tend to replace letters of the alphabet with asterisks in such words as "h*lm*ts" (helmets), "H*lfo***" (Halfords) and so on.

Either to [censored] you off, because it's a naughty word, or possibly from the more mature people 'cos the thread isn't a 'regular' helmet thread (i.e. impossibly long and filled with stuff you've seen before from both sides). The postie thing might be an example.
