    I've only done this with corned beef, not a plain beef brisket. (Of course
    most of the briskets I see at the store are about 15 lbs. and would no way
    fit in my crock pot.) If you can find a brisket small enough to fit in the
    crock pot, go for it. Should come out nicely tender if you cook it about
    12-14 hours on LOW. You'll need a bit of liquid in the crock but not much;
    try a little beef broth (not salty cubes) and maybe a splash of red wine or
    cider vinegar. I'd layer the celery and carrots on the bottom and put the
    brisket on top. Slice the onions (I'd use yellow onions, but that's just
    me) and place on top of the brisket. I'm not sure what "seasonings" you
    have in mind. Along with the bay leaves (a couple at least) I'd add a
    sprinkling of peppercorns. I'd also add some minced garlic.
