I make a sort of kimchee out of cucumbers. I slice them thin with a banjo, add sliced onions, then marinate them with red wine vinegar, Chinese hot chili garlic sauce and a bit of olive oil.
I imagine any hot chili sauce would work well. Makes a pretty good condiment with pork.

I just watched "Deliverance" over the weekend and I'm now imagining the mutant kid with the banjo and the guy with the guitar jamming while cucumber slices go flying all over the place :-)
