This weekend I'm making grilled pork roast with rosemary and garlic.
I'd like to bake some carrots in the oven. I could just bake them as-is
for an hour, but does anyone have a recipe to flavor them up a little?

    I don't have a "recipe" .. but I bake carrots w/ fresh ginger and a few
spoons of frozen OJ and a dash of salt.
    good stuff 🙂

Sounds good. How do you do the ginger, Kat? Grated? Slices? About
how much -- a little, some, or a fair amount?

Grated, to taste.... guess it would depend how much carrot... thinking
about 2 Tbs/lb. Needs butter too, two big knobs... presented drizzled
    with honey.

I usually grate it, but there are times that my grater has seemed to find
other places to be so I have sliced it very thin w/ a potato peeler. Both
    work.
My kids LOVE ginger (could it be that I was eating fresh ginger root like an
apple while pregnant?? lol I don't know)
I use quite a bit. I would say at least 2 tablespoons of grated or 10 very
    thin slices.
There are times that I have blown off the salt, but it really does make a
    difference and takes very little.
I have added white pepper too, I really like it that way but my kids didn't.
