Recessed mount brakes

I recently purchased a 19 year old steel road frame upon which I plan on builing an urban bike. The frame specs call for "recessed mount" brakes.

Must I use brake calipers specifically designated as "recessed mount" or may I use typical Ultegra or 105 brake calipers?

Typical Ultegra or 105 brake calipers use recessed mounting bolts. The alternative is nutted mounting bolts that extend all of the way through the fork and rear brake bridge.
