Recipe for "Urban Spareribs"

Naw, he's described the typical NE restaurant which serves
ribs. NE BBQ joints usually have smokers, and produce
mediocre, but real, Q.

I just went to Jake and Earl's in Waltham MA, which used to
be associated with Chris Schlessinger's restaurant, but is
now independent.

Their Q was passable. The pulled pork was fine, with a nice
North Carolina style vinegar/pepper sauce. The Baby back
ribs were somewhat dry, with a slightly bitter taste from
the wood smouldering. The spares were OK, but the rub wasn't
up to par.

My kids thought it was OK, but not nearly as good as the
Blue Ribbon BBQ in Newton, which is the best in the Boston
area. Another good Boston area Q joint is Tennesees in
Natick. Not bad at all, for a restaurant.

Of course, with all due humility, none of them even begin to
compare with the ribs my kids were brung up on, which have
won many, many KCBS sanctioned state championships...

I gotta agree, but see below.

You are fortunate to have places like that in close
proximity. Here in CT, it's slim pickin's, although I have
to give honorable mention to Black Eyed Sally's in Hartford.
They do use wood and their stuff tain't bad.
