  1. Should have thought of this earlier. Recipes vary, but here is the one I use

    2 cups self raising flour
    OR
    2 cups plain flour & 4 tsp baking powder

    1/2 tsp salt

    1 tbs sugar (optional)

    60g butter

    200ml milk
    OR
    1 egg and 150ml milk mixed together (this is what I use)

    Sift dry ingredients together. Cut butter into the dry ingredients and
    rub with fingers until the mix resembles coarse crumbs. You can use a
    food processor to this point, but you must then turn the mix into a bowl
    before adding the liquid. Add liquid and mix lightly until the dough
    just holds together. Do not knead. Turn onto a lightly floured surface,
    pat into shape (do not use a rolling pin) about 20mm thick - I think
    that's about 1 inch. Cut into squares or use a cutter to make rounds.
    Brush with a little milk and bake for about 10 minutes at 240C (475F).

    The important thing is not to handle the dough too much or the scones
    will be heavy.

    You can add chopped dates or sultanas, or you can omit the sugar and add
    1/2 cup finely grated cheese.

    Pumpkin scones are something else again, if you've got the pumpkin handy.
