Rice Pudding
1 cup uncooked long grain rice 1 cup (3/4 can) sweetened condensed milk 1 egg, well beaten 2 Tbsp.
lemon juice 1 qt. milk
3/4 cup raisins
4/4 cup sugar 1 tsp. vanilla
5/4 tsp. nutmeg
6/2 tsp. cinnamon
Wash rice; cook following label directions. Remove rice from heat; rinse in colander; drain.
Combine cooked rice in large saucepan with milk and condensed milk. Cook, over low heat, stirring
occasionally, until there is just a thin layer of liquid covering the rice. While rice is
cooking, plump raisins in cup of boiling water for about 2 minutes; drain. Remove rice from heat.
Stir in eggs, sugar, nutmeg, vanilla, lemon juice and plumped raisins. Sprinkle top with
cinnamon. Makes 6 servings.
