Rick Bayless in his introduction pp 17-27 talks about his philosphy on
eating and health, weight control and attitudes toward eating. He addresses
the fact that most people think that chefs will be a little over weight and
why he is not. Even though he does give a recipe for a mole in this book,
he says on p. 26, "I've steered clear of moles (they're rich and complex and
typically served only for special occasions in Mexico) except for the simple
yelllow and green ones."

I am impressed with the picture p. 25 showing him in a shoulder stand (I see
in his bio that he was born in 1953. ) I assume it is a current picture. He
is an inspiration.

He's very scary. I used to watch his show occaisonally, but found him
so intense it was disturbing. Distracted me from the sometimes
interesting dishes. I think the reason he's not overweight is because
he just burns energy like a maniac! :)
