Routine for a younger guy

I have been training for a few months now and am starting to realize i want to compete. i have competed in several local crits but its just not my poison if you know what i mean. im looking to start riding in longer road races once i get to college this fall and was wondering if anyone had any input on how to train for 30/40/ and even 60+ mile races or should i just ride ride ride till i get fit enough to do it?

Also if there is any nutritional additions that would help seeing that i am just under 160 lbs, i could probobly use some input on energy dieting.
