  1. Salmon Plaki

I made up that name, this is a variant of a recipe from a Turkish cookbook. The cookbook recipe
    specified mackerel.

    Basic:

Salmon fillet Can of chopped tomatoes 6 tablespoons of olive oil plus more to grease the dish 2 or
more teaspoons of chopped garlic Salt to taste Pepper

Optional ingredients: Chopped Kalamata olives or other black Greek olives Finely chopped
    parsley Capers

Preheat oven to 375 Grease a glass rectangular baking dish with olive oil Place salmon in the dish
Mix all other ingredients, pour over salmon Bake 30-45 minutes

This recipe has proven to be pretty much failure proof. You can bake it longer or leave it in the
hot oven if need be. I have sometimes oversalted it; note that different canned tomatoes have
different amounts of salt, and that olives and or capers add salt; so taste the sauce and adjust
before pouring it on the salmon.

Might experiment with rubbing a little salt on the surface of the salmon
