    I once worked with a guy who was married to
    a German. He told a story about a time when
    they were visiting his wife's parents, and
    they slaughtered a pig to make sausages.
    He was surprised that they used the whole
    pig, including the loins and tenderloins
    to make their sausages.

    I suppose that's what happens when you
    really love sausage, rather than treating
    it like a salvage product for small cuts
    and less desirable cuts like we do in
    this country.

    Also, how do we know this giant wild boar
    would have had good loin and tenderloin
    or made good ham? It was obviously an
    older animal.
