  1. Anyone have any ideas as to WHY the below .. happens?

"As a SCUBA diver I know that if I eat only meats that begin with a "F", ( fish or fowl) and cook
with a "B", (baked, boil or broil), for 2 weeks before a big dive trip I can double my time on a
tank of air and I don't get low BG's. If I eat a beef steak at night, then the next day 15 mins -
20mins per tank of air. I've tested this on myself many times. So, if I want to swim like a fish
then I eat like a fish!"

You have seriously bad air consumption. Even if you double your time as in what, 30 to 40 minutes
per tank? It's not related to what you eat, maybe it relates to what you've been, uhm, drinking?

Air consumption does relate to comfort level, skill, experience, fitness level, and depth. A tank
lasts me an hour at moderate depth no matter what I've eaten. Go to rec.scuba and ask for advice.

The same advice applies with one caveat, if they can't keep their BG under good control, and diet
is one of the means, they shouldn't dive. They put not only themselves, but their dive buddy in
danger by doing so. They should also have glucose available to them at all times and feel
comfortable enough to consume it in some form underwater. Their buddy should be well aware they are
    diabetic, too.

Sounds like amount of fats eaten is what affects the guys BG, not the type of animal protein per se.
If I felt like I was going to pass out during a dive, I'd likely be hyperventilating, too. Not a
good thing if you don't have gills in your neck.
