I've used a glue gun to repair shoe sole wear for years. But I'm wondering
if just letting wear occur and then ditching shoes is best? By "best", I'm
primarily concerned with beneficial effects on my body, not shoe wear.
Unless you have an extremely abrasive, low-impact foot strike, this
sounds like a thoroughly flattened shoe. Feel free to repair them and wear
them, just not for running. Wear the running shoes only during workouts to
extend their useful life. While your old shoes are comfortable, I'll bet my
best spikes that the cushioning in the midsoles is completely shot.

good, as sole wear may make heel strike more uniform/level, and indicate
that a particular shoe symmetrical design does not conform to my actual
unsymmetrical body dynamics.
Hardly. The appropriate compensation is through orthotics. If you've
had any injury issues in the last couple of years, I'd recommend you go to a
podiatrist. (If you're injury free, then simply replace your shoes more
often - remember the 500mile rule).
