I've seen the ultra lights, esp the 7.9 lb Ghisallo.
If I had a high-end 56cm carbon fibre frame with track drop outs, how light of a fixed could I build if I decked it out with as much cf (or whatever is lighter) as physically possible and still be a rideable functional fixed (sans pedals and brakes)?

Easy: Take the 8-lb bike spec, take off the brakes, cables, cogs and derailleur in the rear, think up a wheel with the same rim but with a fixie hub (probably going to be ~100g more) add the weight of a cog and lockring, take 4 links out of the chain, and you're done.
