We eat out far too often, but cooking after arriving home
late from work is not something I enjoy. We had a simple but
very tasty dinner tonight that was easy to put together and
didn't take all that long to cook.
Before leaving for work I pounded a large boneless chicken
breast to a uniform thickness of about 5/8 inch, then
pounded in some freshly cracked peppercorns and dried
tarragon. The breast went into a shallow dish and was
covered with a mixture of 1/3 EVOO and 2/3 fresh lemon
juice. The chicken marinated all day in the refrigerator,
was then drained and cooked on a hot grill until well-
colored and moistly done.
Along with the chicken we had garlic green beans, the beans
boiled whole in rapidly boiling water until barely tender,
then dressed with chips of fresh garlic sauteed in butter.
We also had tiny new potatoes that were halved and steamed,
then tossed with plain yogurt and paprika.
Before I started cooking dinner I cored two large apples
and filled the centers with a little sugar, butter,
raisins, and broken walnuts, and slipped them into the
oven. A while after dinner we ate the warm apples with a
bit of cream poured over. It was a very satisfying dinner,
if not gourmet fare.
