Soowar Ka Gosht Vindaloo

This is a sour pork curry popular in Bombay. You can use chicken, shrimp
or any meat in it.
2 lbs. lean pork, cut into small cubes
1/2 cup vinegar
4 medium onions, chopped
1 tsp minced garlic
1 Tbsp minced gingerroot or 1 1/2 tsp powdered ginger
1 Tbsp mustard seed
1 tsp ground turmeric
1/2 tsp cayenne pepper
1/4 cup cooking oil
1 cup chicken bouillon
6 med. potatoes peeled and quartered
Marinate meat in vinegar, onions, garlic, and seasonings for 2 hours or
more. Place in large pot on
top of the stove and add the oil and bouillon. (Sesame oil is used in
western India but any vegetable
oil will do). Cook over medium heat for 20 minutes. Add potatoes and cook
slowly, covered for about 40 minutes or until the potatoes are tender.
Add more bouillon if necessary during cooking.
