Spiced Apple Butter
1 1/2 lb. coarsely chopped apples 1 1/4 c. hard cider Light brown sugar
1/4 tsp. ground cloves
2/4 tsp. ground cinnamon
3/8 tsp. ground nutmeg
In large saucepan cook apples, water and cider over low heat until apples are very soft. In food
processor/blender, process apples and liquid to a puree. Measure 1 1/3 cups sugar for each 2 cups
puree. In large saucepan, cook puree over low heat 30-40 minutes until mixture resembles thick
cream. Add spices and sugar. Stir until sugar dissolves. Simmer gently, stirring often, until liquid
evaporates. Spoon into sterilized jars and process in hot water bath.
