Spinach, Orange and Onion Salad submitted by rosskat from NY, USA 1 large pkg of ) fresh spinach, (baby if you can find ) cleaned and tough stems removed 1, 11 oz can or mandarin oranges.- drain and reserve juice 2 Tbsp fresh chopped red onion 2 Tbsp roasted hulled sunflower seeds 1/4 cup olive oil 1 tsp sugar salt and pepper to taste This is a very tasty, refreshing not overly sweet salad. Hand tear spinach leaves if needed and place in salad bowl with onion , sunflower sees and drained oranges. To the drained orange liquid add the olive oil and sugar and salt and pepper to taste. When ready to serve, toss dressing into salad and serve immediately.. Note: if desired for a sweeter salad , one may add golden raisins or other dried fruit such as dried cherries etc for taste and color.
