  1. Stuffed Flounder

    2 pounds Flounder fillets
    1 tablespoon mayonnaise
    1 pound crabmeat
    1 teaspoon dry mustard
    1 egg, slightly beaten
    dash liquid hot pepper sauce
    1/4 cup diced green pepper
    2 tablespoons melted fat or oil
    2 tablespoons milk paprika, for sprinkling

    In a medium bowl, add crabmeat, egg, green pepper, milk, mayonnaise, dry
    mustard and liquid hot pepper sauce. Mix all ingredients well. Cut fish
    into 8 pieces. Place four fish pieces in a single layer, skin side down,
    in a foil-lined baking pan. Spoon crab mixture on each, cover with
    remaining fish pieces. Brush top with melted fat or oil. Sprinkle with
    paprika. Bake in 400 F oven for 20 minutes, or until fish flakes easily
