  1. is it possible to remove sugar from foods? let's say you
    have a banana and you want to mince it up and get out all
    the sugar. is that possible?

    my idea is to make low carb/low sugar fruit.

  2. Not easily, it wouldn't be a banana after you were done with
    it. Banana flavors are available. Fermentation will do some,
    but not all of what you want. Carbs in fruit is the food
    stored for the seeds to sprout, except banana does not grow
    from the seeds; another story.

    We already have it. It is called "unripe fruit". There
    should be some on the trees about now. If you wait it will
    be too late. They are going to ripen soon.
