I would think that sports scientists know the answers, and can compute probable calories and times based on long histories of monitoring rider performance.

There seems to be a difference between GC contenders and "regular" domestiques or specialists. Most riders can't give 100% on consecutive days. GC contenders and "super domestiques" can go hard day after day.
Or maybe it's that the GC contenders are at a high enough level that their 90% efforts exceed the 100% from everyone else.
