  1. this is my own version and it's very creamy and quite delicious IMHO.
    Give it a try.

    This is very versatile. You can leave out the sausage altogether or
    substitute pancetta or bacon. You can leave out the carrot and
    celery. You can use onion instead of leek. You can add mushrooms.
    Just about anything goes.
    The real winner and time saver here is the use of Instant Garlic
    Roasted Potatoes as the thickener. I'm not sure I would like these
    instant ones as a dish but used in this way they had a nice depth of
    flavor.{}
    Try them as a thickener for other soups.{}

    Terry's Own Potato Soup

    Serves 4
    Recipe By: Terry Pogue

    1 5" piece of kielbasa or chorizo or andouille
    1/4 cup leeks (or onions) -- chopped fine
    1 stalk celery -- chopped fine
    1 small carrot -- sliced fine
    8 smallYukon gold potatoes -- quartered
    1 quart chicken stock
    1 pint half and half -- or milk
    1/2 package Instant Garlic Roasted Potatoes
    knob butter
    salt and pepper

    Saute the the sausage of choice, add the leeks, celery, carrot and
    continue to saute a few minutes. Add the potatoes and chicken stock.
    Cook till fork tender. Then, with the back of a spoon or masher,
    break up some of the potatoes leaving some chunkyness. Add the half
    and half. You may decide to add a bit of water depending on the
    consistency. It all depends on how large the potatoes was to begin
    with. After adding the half and half (and water, if needed) bring up
    to heat and stir in as much of the Instant Garlic Mashed Potato as
    needed to make a nice creamy soup. Place in bowls and add a knob of
    butter to each bowl.
