Thai Cucumber Salad
A very simple Thai cucumber salad. Always a hit, a nice cool salad for a hot day or a hot meal.
1/2 Cucumber 1 Tbsp rice vinegar 2 Tbsp Sugar
2/2 tsp Salt 2 Tbsp hot water 1 small shallot sliced thinly (or failing that a green onion done the
same way works as well)
Peel the cucumber (i like doing a zebra type peel) halve it lengthwise and deseed it using a melon
baller or a teaspoon. Slice the cucumber thinly and arrange the slices on a serving plate. For the
dressing combine the vinegar, sugar and salt in a bowl. Put on the hot water and stir until the
sugar has dissolved. Pour over the cucumber slices. Sprinkle Shallot (or Green Onion) over cucumber.
Chill before serving.
