  1. Three-Cheese Tortellini And Peppers

    Serves 6

    1 packages three-cheese or other tortellini
    1 red bell pepper
    1 orange bell pepper
    1 yellow bell pepper
    1 1/2 tablespoons extra virgin olive oil
    1 small onion -- chopped
    1 clove garlic -- minced
    Salt -- to taste
    Pepper -- to taste
    1/4 cup Romano cheese
    1 tablespoons chopped parsley

    Cook and drain pasta as directed on package. While pasta cooks, stem and
    clean seeds from peppers and dice them. Heat olive oil in heavy bottomed
    skillet. Saute chopped onion and garlic for 3 minutes. Add diced peppers
    and cook about 8 minutes, until they are mostly cooked but still crunchy.
    Season with salt and pepper. Remove skillet from heat. Add well-drained
    tortellini to the skillet. CAUTION: Make sure pepper and oil mixture has
    cooled a bit so it doesn't splatter. Mix tortellini into peppers and heat
    through. Sprinkle with grated Romano cheese and chopped parsley and
    serve.

    Note: This recipe was developed using Barilla Three-Cheese Tortellini.

    Makes 6 servings.
