    The kids lapped these up tonight. Served with rice and a nice salad. I
    usually serve this for Christmas instead of Lutefisk.

    Swedish Meatballs

    Amount Measure Ingredient -- Preparation Method

    1 tablespoon butter
    1 tablespoon onion -- minced
    2/3 cup soft bread crumbs
    1 cup water
    1 pound extra lean ground beef
    1 teaspoon salt
    1/2 teaspoon ground allspice
    1/2 teaspoon white pepper
    1/2 teaspoon sugar
    1/4 cup butter -- melted
    1 cup beef broth

    Melt butter in skillet and saute onion until tender. Combine
    breadcrumbs and water, let stand 1 to 2 minutes. Add beef, sauteed
    onion, salt, allspice, white pepper and sugar. Beat with mixer on low
    speed until smooth. Switch to high and beat until light and fluffy
    about 10 minutes. Dip 2 teaspoons in ice water and form meatballs.
    Continue dipping and rolling meat until done. Place meatballs in 1/4
    cup melted butter and brown. Add 1 cup concentrated beef consomme and
    simmer 10 to 15 minutes.

    Tip: I use a small cookie scoop dipped in ice water to form the
    meatballs. These are very good as an appetizer or main dish.
