  1. Truffled Mushrooms Over Whipped White Beans

    Serves 4
    Recipe By: Riley

    2 tablespoons Olive Oil -- divided
    1 medium Leek -- white and pale green parts, chopped (about 1/2 cup)
    2 can Cannellini Beans, Canned -- rinsed and drained
    1/2 cup Low Sodium Vegetable Broth -- Chicken broth is good
    but not very veggie.
    2 clove Garlic -- minced
    1 teaspoons Fresh Savory -- chopped
    1 teaspoons Fresh Tarragon -- chopped
    2 teaspoons Fresh Thyme -- chopped
    1 pounds Mushrooms -- wild, halved
    1/4 cup Fresh Parsley -- chopped
    2 teaspoonsTruffle Oil

    Heat about a teaspoon of oil in a 3 qt or so sauce pan over medium heat.
    Add leek and saute 2 minutes. Stir in beans, broth, garlic and herbs.
    Cover, reduce heat to low, and simmer 10 minutes. Season with salt and
    pepper. Blend with immersion mixer (or blender) until smooth and fluffy.
    Cover and keep warm. Heat another 1 tsp oil in a large skillet over high
    heat. Add mushrooms in small batches and saute until soft and brown. Move
    to outside edges. Add more mushrooms and oil as needed and repeat until
    all mushrooms are soft and brown. Season with salt and pepper, and stir
    in parsley. Spoon whipped bean mixture into shallow bowls. Top with equal
    portions of mushrooms. Drizzle each serving with truffle oil, and serve.

    Recipe Notes

    We didn't have any wild mushrooms so used portabellas and shiitakes.
    Chicken broth was used instead of vegetable broth, and I had more herbs
    on hand (savory and tarragon) then just thyme. I didn't see the need to
    use a large skillet for the beans--a saucepan made more sense, and better
    lends itself to the use of an immersion blender. A large skillet, rather
    than a medium, was used for sauteing the mushrooms, in batches, not all
    at once. Which called for a little more olive oil. All in all it was easy
    and fast. The flavor of the truffle oil really enhanced the mushrooms and
    beans. It was very good the next day reheated in the nuke. Worth doing
    again. The NI matches fairly well with what was reported after entering
    my own info in for Trader Joe's Cannellini White Kidney Beans. MC's was a
    bit off on this one. Riley
