Dennis' Turkey Soup
2 cups turkey meat shredded (darn & white)
2 cups chicken broth
2 cups water
2 Tbsp oil
1 Tbsp salt
1 Tbsp black pepper
1 tsp cayenne pepper
1 1/2 tsp Cornstarch (for thickening if desired)
2 Tbsp Old Bay Seasoning
1 Tbsp parsley (chopped)
1 sage leaf (whole) or sub with dried sage spice
2 large garlic cloves (Minced)
1 large yellow onion (sliced stir fry style)
1 large green bell pepper (sliced stir fry style)
3 large carrots (Cut into small chunks)
1 large package of frozen peas and carrots
5-6 slices of cooked bacon. Cut into bite sized pieces (not crispy)
Prepare bacon prior to beginning the recipe. In a large cooking pot
lightly sautee in oil your salt, peppers, garlic, onion & bell pepper for
about 5 minutes. Add chicken broth and water. Stir and set on a low heat.
Add all remaining ingredients except for the cornstarch and stir
occasionally. After about 20 minutes you can begin adding the corn starch
and thicken if you like. Or you can leave the cornstarch out for a more
soupy consistency.
Season to taste & enjoy!
