i have a trek 2200 with an ultegra triple 52/42/30 and a cassette starting with a 12. i'm an intermediate rider 6ft 225lb and ride on hilly terrain. basically i ride the middle of the cassette and move up and down the crankset as needed. i have always felt there should be a faster gear for downhill to flats and i never use the two lowest gears on the granny ring. is there a better gear combo for me to use? i need to change cassette/crank/chain.

You can get a casssett with an 11 small cog and smaller big cog. If that isn't enough speed, switch the big ring to a 53 or 54 too. Biggrer chainrings may require a longer chain, depending on what you do with the casette.

Or just learn to spin faster!

I regular TT on a fixed wheel 50x14 and have done some fairly fast times........
