V Brakes

Unlikely to be an issue, and you can take up the extra by appropriate use of
the various washers in the brake-block packs.

I assume you're changing the brake levers as well, or have levers which can
be switched between Canti and V operation (just checking, don't want you to
discover no brakes!).

I'd have thought so. My old MTB frame might have just cleared a 2" tyre. My
current one has clearance for a 2.7" tyre. Both have V brakes, and both work
fine.

V brake levers pull a lot more cable!!

OTOH when my mum built up her current bike around a s/h frame she used
canti levers with v brakes. OK the levers have a lot of travel which
can feel disconcerting but she gets on fine with them (including cycle
camping) so you *may* be able to get it all working. Worth knowing
about the issue though
