Why not? But I would expect the stem shifters to be easier to use on
drop bars. Do you expect to use the drops much?

Since you have the cantis, give it a try. You seem to know all the
options. Doesn't the best answer depend on you and your bike?

Do (non-V) cantis use similar cable travel to caliper brakes?
( I know its adjustable by changing the tranverse cable length.)

Not really. Most drop bars are larger in diameter than flat bars. I'd
switch to bar-end shifters- they've never done me wrong. I've got a
set of 7-speeds that still work great after 14 years. Switching to
Ergopower would require buying a Campy rear derailleur, unless Peter
Chisolm knows some sort of magic spell to make 'em work with Shimano
derailleurs.

Use cantilevers (assuming you have a place to hang the cable from) and
adjust correctly. You'll be happy.
