    V8 Rice Salad

    2 1/2 cups V-8 1 teaspoon tabasco (more or less - to
    taste) 1 cup brown rice 1 15 ounce can black beans
    (rinsed & drained) 1 cucumber, diced 1 can 12 ounces
    vacuum packed corn
    1/4 cup chopped cilantro (optional)

    Heat V-8 and tabasco to a boil, add rice and simmer low,
    covered for 45 minutes, until rice is tender. Remove from
    heat cool. Add remaining ingredients and refrigerate
    until cold.
