Following suggestions on this list, I reworked our site at eggless.comeggless.comOpen ↗ and made our vegan
sections more accessible. There are currently 20 recipes for vegan drop cookies, 11 for other vegan
cookies (grams measurements only at at present), and 24 vegan cake recipes.
Here are two sample cookie recipes, and a vegan celebration cake - perfect for the season.

Two Vegan Cookie Recipes.

Strawberry Drops (vegan)
* 3/4 cup soft brown sugar
* 1/2 cup vegetable margarine
* 1 teaspoon almond essence
* 3 tablespoons soya milk
* 2 cups plain/all purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1 cup fresh strawberries, mashed
* 1/2 cup chopped walnuts
* 1 1/4 cups icing sugar/confectioner's sugar for glaze
Preheat the oven to 190°C/375°F/Gas mark 5
Remove 4 teaspoons of the strawberries with juice and set aside for the glaze. Cream the sugar,
margarine, and almond essence until creamy. Stir in the soya milk. Sift in the dry ingredients,
alternately with the crushed strawberries. Stir in the walnuts.
Drop by tablespoons onto lightly greased baking trays, 4cm apart. Bake for 12 - 14 minutes.
To make the glaze, mix the reserved berries with the icing sugar/confectioner's sugar to make a thin
glaze and spread over the warm or cold cookies.
Sesame, Apple and Bran Cookies (vegan)
* 1/2 cup packed honey dates
* 1 1/4 cups applesauce, fresh or canned
* 1 teaspoon cinnamon
* 1 teaspoon vanilla essence
* 1 cup wholemeal flour
* 1/2 cup wheat bran
* 1/2 cup oat bran
* 1/2 cup sesame seeds
* 3/4 cup raisins
Preheat the oven to 180°C/350°F/Gas mark 4
Mix the brans with 1/2 cup hot water in a medium bowl. Set aside. Chop and crush the dates, and
blend thoroughly with the applesauce, cinnamon, and vanilla. Sift in the flour and add the bran
mixture. Blend well. Put in the sesame seeds and raisins and blend again.
Drop by tablespoonful onto a lightly oiled baking sheet, flatten slightly using your wet fingers.
Bake for 20 minutes. Cool in the oven for 3 minutes and remove to wire racks to cool completely.
Vegan Cake.

Celebration Cake (vegan)
* 2 cups wholemeal self-raising flour
* 1 1/2 cups sultanas
* 1 1/2 cups raisins
* 1 cup currants
* 1 1/4 cups apple juice concentrate
* 3/4 cup vegetable margarine
* 6 tablespoons raw demerara sugar
* 3 tablespoons molasses
* 1/2 cup soya milk
* 2 tablespoons mixed spice
Preheat the oven to 150C/300F/gas mark 2
Use a 23cm/9 inch round cake tin.
Put all the dried fruit in a bowl, pour the apple juice concentrate over and leave to soak
overnight, Stir from time to time to make sure all the fruit is soaked.
Put the margarine and sugar in a large mixing-bowl and cream well together before stirring in the
molasses, flour, soya milk and mixed spice. An electric mixer may be used if you prefer. Fold in the
soaked dried fruit and stir till evenly distributed through the mixture.
Line the cake tin with grease-proof paper. Pour in the mixture and bake for about 3 hours
till a warm knife inserted in the centre comes out cleanly. Allow to cool on a rack before
removing from tin.
